High risk food

Means food that has to be kept at certain temperatures to minimise the impact of bacteria that could grow or produce toxins in food.

This is food that has been sealed in a package when received by the community group, and remaining in that package until sale. Packaging is designed to protect the food from contamination by physical, chemical or biological hazards.
